What Is Cast Iron Cookware?

Unlike copper, which is also used for cookware, cast iron does not need to be coated to prevent it from leeching unhealthy amounts of metal into food. Think what could happen if that coating were to wear off? However, cast iron cookware is sometimes enameled for ease of use, not safety.

Cast iron is used for cookware because it has excellent heat retention and diffusion properties, can be produced and formed with a relatively low level of technology, and is not among the intrinsically toxic metals.
