If you’re hungry for a meat-based dinner but tired of getting burgers, a steak might be a better idea. Steak may have some good health benefits that make it a fine choice in moderation, especially if you usually eat beef in ground form. Depending on how it’s cooked, steak offers lots of vitamins and minerals, and it can actually be a little safer to eat than ground beef, especially if you prefer your beef on the rarer side. Food Safety Issues Rare and medium-rare burgers are no longer considered very safe to eat. The reduced cooking times and temperatures are often not enough to kill any bacteria in the meat, and this puts you at risk of food poisoning. However, many steakhouses still serve medium-rare steaks and show pictures in their ads of slices of dark pink meat. This doesn’t mean they’re ignoring safety standards — it means they’re taking advantage of steak’s block-like nature. Steaks are cuts of dense muscle tissue. They can have bacteria like E. coli on the outside, but generally not on the inside. Cooking a steak, especially if you sear it on all sides, kills the bacteria if you cook the outsides to proper temperatures. However, the same isn’t true for ground beef. When you grind beef, you don’t grind the outside and then grind the inside separately. All of it is ground together, so any bacteria on the outside of the cut of meat will be mixed in thoroughly with all of the meat. So if you get something like a burger, you need to have it cooked well to ensure everything in it is dead. With a steak, you can generally cook it to a more medium-rare stage, though again, proper cooking protocols have to be observed, and the restaurant’s kitchen has to be clean. Nutrition Retention Because a steak doesn’t have to be cooked as long, it may also retain more nutrients. Steak that is cooked to medium rare tends to have more B vitamins and iron; a lot of those vitamins and minerals are lost if you cook the meat for a longer time, mainly because a lot of the fat melts off, taking some of those vitamins with it. Of course, you do have to be careful with fat intake if you eat medium-rare steak because of the saturated-fat content and added calories. Shrinkage and Calories Another advantage is that, since you can eat a steak that’s been cooked less, you get more meat. Meat shrinks as it cooks — Weight Watchers says it shrinks about 25 percent — and the more you cook it, the more it shrinks. So a cut of well-done meat will be smaller than the same cut cooked to medium rare. That means that you might get more meat and a more filling meal for fewer calories. For example, if you had a 1/4-pound steak that you were going to cook to medium rare, and 1/4 pound of ground beef in burger form that had to be cooked to well-done stage, the finished burger would be smaller than the finished steak.
